Shrimp Linguine- ( This recipe came from Emeril's TV show, if you have ever tried to follow one of his recipes you know that he does not talk about measurements. You kind of have to guess at everything. That is what I have done here!) And it has been YUMMY every time!
ingredients:
olive oil
2 tablespoons of butter
jalapeno pepper- (chopped) (1 pepper for 1 to 2 pounds of shrimp, 2 peppers for 3 or more pounds of shrimp)
1 medium onion- (chopped) ( I use a sweet yellow onion)
2 cloves of garlic (I use 2 heaping tablespoons of jarred Organic garlic)
2 good size tomatoes (chopped) (I use Roma tomatoes because they don't turn to mush when there being cooked for a long time)
fresh basil ( chopped) (3 to 4 good size leaves without the stems is PERFECT)
pepper jack cheese (shredded) ( I use 8 oz. of cheese, I found if you use too much your pasta gets very sloppy :( and we don't like sloppy )
Parmesan cheese (just enough to sprinkle over the top when its all done)
a little salt and pepper
1 cup of cream (I have never been able to only use a cup, it ends up being the whole pint) ( I use Horizon's Organic Heavy Whipping Cream)
1 pound of linguine (it doesn't have to be linguine, I do recommend using a thick pasta though. It soaks up the sauce really nicely!) (And also 1 pound of pasta would be good for up to about 1 and a half pounds of shrimp, any more shrimp and I would do another pound of pasta)
2 pounds of shrimp (peeled and cleaned) (Use whatever amount is good for your family)
reserve about 3 cups of starchy water after your pasta has boiled
here we go.......
coat your pot with Olive Oil and stir in your butter. Cook on medium heat.
When the butter has melted down stir in your jalapeno peppers, onion, garlic and tomatoes.
let that cook down for a good 30 minutes. After about 10 minutes you can lower your heat to medium- low.
In a separate pot start your water for your pasta, while this is cooking.
When your pasta has come to a roaring boil, use a ladle and pour in 1 cup of your starchy pasta water to your pepper, onion mixture. If it still looks thick pour in another cup. (I use about 2 and a half cups of water total)
After you get the consistency that you want pour in your cream. Start with a cup and go from there.
(It can be a little soupy, not to much though, the noodles will soak some of it up)
Sprinkle the little bit of salt and pepper over your shrimp
When your pasta is almost done, then stir in your shrimp to the pepper, onion mixture. (almost meaning, its coming out in 3 minutes. Also remember you want to take your pasta out a few minutes earlier than your cooking directions says because it will continue to cook when it gets added to the shrimp)
Let the shrimp cook until they are pink, they should not cook more than 7 minutes (7 minutes is using larger shrimp).
When they have turned pink add your basil, mix around and turn fire off.
Drain your pasta when its done and pour the pasta into the shrimp mixture. MIX WELL!!
Stir in your pepper jack cheese, MIX WELL!!
Sprinkle a little Olive Oil over the top and top it with some Parmesan cheese!!
I tried to make these ingredients as detailed as possible, this dish sounds more complicated than it really is. There's a lot going on but believe me it is so worth all of it!
